Ingredients

1 cup light brown sugar

2 tablespoon kosher or sea salt

1/4 cup chili powder

1 teaspoon chipotle powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon crushed red pepper flake

1 teaspoon ground mustard powder

1 teaspoon cayenne powder

1 teaspoon ground black pepper

1 teaspoon smoked paprika

1 teaspoon ground allspice

1 teaspoon ground nutmeg

1 teaspoon old bay seasoning

1 teaspoon ground ginger

1/2 teaspoon ground cinnamon

Instructions

Mix all ingredients in a bowl. The brown sugar may be lumpy, so to achieve a finer texture you could pulse all the ingredients in a food processor.

I store my rub in an old kosher salt bottle, but any airtight container will work. If you want to prevent the brown sugar from lumping, store the rub in the freezer. It only take a few minutes for it to thaw out when you need it.
